peaches with amaretti cookies
- 8-12 amaretti cookies
- 8 almonds
- 4 ripe peaches, halved and pitted
- 4 teaspoons sugar (1/2 teaspoon per peach half)
- 4 teaspoons unsalted butter (1/2 teaspoon per peach half)
- 8 tablespoons brandy or white wine
- 1 cup heavy whipping cream
- 1 tablespoon sugar
preheat oven to 350 degrees F.
for the whipped cream: In a large bowl, add heavy whipping cream and 1 tablespoon of sugar, whip until stiff peaks form. Keep chilled until ready to serve.
butter the bottom of a shallow baking dish.
arrange the peaches cut side up in the prepared dish.
in the bowl of a food processor, add the amaretti cookies and almonds, and pulse until finely crumbled.
fill the center of each peach with the amaretti cookie and almond mixture.
sprinkle 1/2 teaspoon of sugar over each peach.
dot each peach with 1/2 teaspoon of butter.
add 1 tablespoon of brandy or white wine on each peach.
cover the dish with aluminum foil and bake 15 minutes.
uncover and continue to bake for 15 more minutes, until the peaches are tender and the filling is crisp on top.
serve hot or at room temperature with whipped cream.
